Rainbow Roll

What Is Rainbow Roll?

The Benihana Rainbow Roll starts with a classic California roll — crab stick, avocado and cucumber — then gets draped with alternating slices of tuna, salmon, white fish and more avocado. The striped topping is what gives it the rainbow name, and each slice adds its own flavor: rich salmon, clean tuna, delicate white fish and buttery avocado.

It is one of the most photographed items on the Benihana sushi menu and a smart pick when your table cannot agree on one fish. Served as eight pieces, it eats like a sampler platter in a single roll, which also makes it a good value compared with ordering nigiri piece by piece.
